WHO IS ZEKERYA COŞAR?

I was born in 1979 in Sazlıpınar village of Karapınar. I have been in Konya since I was 10 years old. I took my first step to Turkish bagel sector in Konya in 2003. I have consistently continued this step by improving myself and our work until today.

THOSE WHO DON’T HAVE TURKISH BAGEL IN THEIR LIVES CAN’T BE SUCCESSFUL

Stating that everyone should have Turkish bagel in their lives, Zekerya Coşar has said "Everyone sold Turkish bagel in their childhood. In my opinion, those who don’t have Turkish bagel in their lives can’t be successful.  Turkish bagel must be alive. I also sold Turkish bagels and bags in Muhajir Bazaar on Sundays when was a child.

Saying that they have been negotiating in several countries in Europe, Coşar has stated that they aim to be in Europe in 2015. Coşar said "We are negotiating in Germany, Netherlands, France and Belgium. We won’t send products there from here. We will select a region, establish a factory and we will make regional distribution. I hope we are in Europe in 2015".

Bringing a different concept to Konya in 2003, Çıtır Simit is opening into Europe.

This week, our guest to article series called İŞ ERENLER is ZKC Group which also includes Meram Çıtır Simit. ZKC Group General Manager Zekerya Coşar aims to carry Çıtır Simit brand and taste abroad. He adds that they will be in Europe in 2017. Mentioning that many people sell Turkish bagels in childhood, Coşar has stated that those who don't have Turkish bagel in their lives can't be successful according to his opinion. Stating that he also sold Turkish bagel in his childhood, Coşar has mentioned that they carry out business with the principle of not selling product which they don't eat and they continue to grow with this understanding today.

Mr. Zekerya, when did you start your business life related to Turkish bagels? You have created a different concept in Konya about consumption of Turkish bagels. How did this come to your mind?

Turkish bagel popularity began throughout Turkey around 2003. Turkish bagel was socialized a little bit more everywhere. Different varieties were created. There was no such sector in Konya. We decided to do this business in Konya. In Konya, there was no other company with on-site consumption and instant hot Turkish bagel varieties and poğaça varieties. We started this business in 20 square meter workplace as two friends. Then, we opened branches in Selçuk University Campus and in İstanbul. We closed İstanbul branch in the following periods. We planned to continue to grow strongly and locally. Now, we have branches in Konya centrum, Karapınar, Ereğli and Karaman. Our negotiations in some other districts continue. Our negotiations in Niğde, Aksaray, Çumra, Seydişehir, Beyşehir and Mediterranean region continue.

You are a Turkish bagel brand now. Do you have a history about Turkish bagel before? Did you sell Turkish bagel prevously?

Everyone sold Turkish bagel in their childhood. In my opinion, those who don’t have Turkish bagel in their lives can’t be successful. Turkish bagel must be alive. I also sold Turkish bagels and bags in Muhajir Bazaar on Sundays when was a child.

You give Turkish bagels to thousands of people in a day. What about your Turkish bagel consumption habit?

I’m a good Turkish bagel consumer. As part of our job, Turkish bagel consumption for the purpose of control is inevitable. Apart from that, it is important part of our breakfasts.

There are dozens of establishments doing this job in Konya. However, you stood out amongst others and showed that you were different. What is your difference from other places? What is your working principle?

I am the master mind of those in Konya. Many of those friends have worked with me as an employee. Then, they started their own business. Our service style, product quality and continuous standard are ones making us what we are. Our dough is very different. We have our own recipe. Our customers can’t find the taste of our products in other places. As I have said before; our main principle here is "if I don’t eat, our customers shouldn’t eat it".

As ZKC Group, what other sector do you operate in?

ZKC GROUP was established in 2012 with the aim of expanding our service area and demonstrating Meram Çıtır Simit's experience, quality in different services and our group includes Meram Çıtır Simit, Hamurex and CTR Catering companies. With our CTR company, we offer organization, cocktail services. We do this actively. There is Meram Çıtır Simit. However, we don’t need to mention, it is our flagship. Our R&D works related to Hamurex continues. We will put this into service in 2015. As ZKC group, we have 100 employees. In Konya centrum, we have 9 branches and 1600 square meter factory.

If we talk about abroad, did people love Turkish bagel in there? Do they know Turkish bagel?

Turkish bagel culture became very popular in areas where Turkish population is densely found in. Because, I think that Turkish bagel is indispensable for our culture, culture is indispensable, you can't give it up wherever you are. It is made of flour, water, salt, yeast and sesame seeds. There is no other additives. In our country, there is not any house where Turkish bagels doesn't enter. There is no such product in their cultures abroad. Mostly, there are products resembling tart and poğaça. Our citizens living abroad have demands, we don’t want to ignore this demand. For this reason, we need to produce there, serve our products with a good concept. And, this requires knowledge and experience. We want to share our 11 years of experience with them, we see that investors investigate, make comparisons and want to work with us. Areas where we are advantageous are not only preparing the product, but also manufacturing machines and production equipment. We manufacture baking ovens, visual systems ourselves. That's why our concept is attractive. Investors are in search abroad, they can't ignore interest in Turkish bagel increasing day by day abroad. Because, it is an attractive, profitable and long-term investment area that will continue many years. We are negotiating in Germany, Netherlands, France and Belgium. We won’t send products there from here. We will select a region, establish a factory and we will make regional distribution. I hope we are in Europe in 2015.

Are there any regions with which you are negotiating other than Europe?

There are investors in Saudi Arabia who are interested in Meram Çıtır Simit. It has been approximately 8 months and we are still in negotiations. If all goes well, we will get result in this year. Eight years of period is a long time. The reason why it proceeds slow is the necessity of overcoming some obstacles about trade relation in Arabia, that's why we are making slow progress. We have a partner from Medina. We have a Turkish partner besides him. We will establish a factory in Medina and we will send products to Mecca and Jeddah from there. Because it is abroad, we want to enter this business by dividing them among us while taking risks. We don’t want to take all risks.

Lastly, what are your recommendations for those who want to enter this sector?

If they want to do this business, they should visit us. We give franchise now. We are going to help them in every point. It doesn’t matter if they buy it from us, we also help them about idea. We are waiting for investors who will enter this business.
